But step past the truck, and you'll find the door to a vibrant dining experience waiting for you. Inside, bursts of red, green, orange, and yellow greet you, with colorful chairs lining the tables and counters. The decor sets the perfect stage for an authentic culinary journey inspired by the flavors of the Mexico City region. This isn't your typical Cabo-style fare of tacos and tourist-friendly fish or chicken dishes. La Fondita offers the real deal. For lunch, I chose the huaraches, a dish packed with rich, layered flavors. Unlike a tortilla, huaraches are made with a thick, oval-shaped flatbread, topped with your choice of meat, crisp lettuce, crumbled cheese, queso corazón, and fresh slices of avocado. I opted for the carnitas huarache, and it was nothing short of delicious--each bite a perfect balance of texture and taste. This place gets pretty busy after 6:30pm. They have outside seating along with an attached restaurant if you prefer to dine inside, but I've always liked their food truck vibe more. ”
“ Delicious food! When you sit down you're greeted with Beans with cheese dip and salsa with chips. I love the table salsa but for some reason the salsa on the entrees is super hot so I always order my food without the salsa and add the table salsa after. Carnitas super burritos are excellent and The nachos are so big they can feed 3 people. Service is always great, and on the weekends they do karaoke. The corner is always busy but we are always seated and served quickly. ”
